What's more traditional than pancakes for brunch? This recipe is extra special because you don't need to worry about getting perfectly round little cakes! The use of a skillet makes it super easy and gives it a gorgeous rustic flair. Serve up with a generous dollop of Miyoko's European-Style Cultured Butter!

SUMMER TOMATO AND SPINACH QUICHE

You know we can't get enough French-inspired cuisine at Petit Vour! This spin on traditional quiche pays true homage to the original (think buttery, flaky crust and a dense flavorful interior), yet celebrates the bounty of the season with ripe cherry tomatoes and fresh baby spinach.

EVERYTHING BAGEL WITH VEGAN HOT PEPPER CREAM CHEESE + CARROT LOX

This New York-style vegan bagel and lox will get any city mama's mouths watering! The secret here is the Hot Pepper Cream Cheese: cultured overnight like traditional cream cheese but taken up a notch with blistered jalapeños. A simple pickle of ribboned-carrots creates a very lox-like flavor and texture. Add some capers and dill and it's pure NYC magic!

SMOKY WHITE BEAN CROSTINI WITH BALSAMIC GLAZE AND NECTARINE

We are all heart-eyes emoji over this gorgeous sweet and savory crostini. White beans whipped up with a little baking soda, liquid smoke, and walnut butter(!) makes for an otherworldly velvety spread that is simply unmatched. Layer on a toasty sourdough bread with balsamic reduction, freshly sliced nectarine and a sprinkle of crushed pistachios and you've got one stellar brunch canapé.

SMOKED TOFU BENNY WITH VEGAN HOLLANDAISE

Okay, we lied. There is one more brunch-appropriate dish than pancakes, and it's this: a benny with hollandaise sauce. This tofu benedict is rich and savory, perfect for the mom who doesn't have a sweet tooth in the morning. We just adore a sweet pastry and a hot, dark espresso in the mornings, and we think mom will too! The addition of toasted almonds and powdered sugar to this buttery, flaky croissant base calls to mind the sweet satisfaction of marzipan. An egg-free vanilla custard provides a rich center that's just too good to pass up!

BLOOD ORANGE + CHOCOLATE BRITTLE PARFAITS

If there was ever a fruit parfait that could be called 'art in a glass', this is it. For moms who love lighter fare, but secretly love to indulge, this deceivingly easy parfait is a winner. Blood oranges give the cashew cream a delicious brightness while also adding a lovely pink hue. Chocolate and quinoa are combined to make a break-apart brittle that stands in for boring old granola. Top off with pomegranate kernels and shaved dark chocolate, and you can already hear mom sigh in delight!
